Kaizen Sushi BarThe Best Sashimi in Montreal: Accomplished sushiphiles determine the quality of all Sushi restaurants by the level of freshness and variety of the Sashimi offered by the Chef(s) of the house. There can be no fooling the tongue and nose with sauces, spices and other culinary tricks as that which is possible with maki and nigiri as practiced by many Pan-Asian Chefs different renditions of Japanese cuisine. Sashimi is the true test and Kaizen Sushi Bar has been the unchallenged champion in this arena for a very long time in Montreal as well as in most parts of North America. Kaizen's Master Chef Antonio Park has further upped the ante with his recent introduction of Line Caught Fish from the great fish markets of Tokyo. Comparing this hand caught fish by traditional Japanese fisherman to the vast amounts of commercial fish caught in mile long nets by monster trawlers which traumatize the fish in the long process. One can truly taste the differences in taste, aroma and textures. This experience always knocks my socks off! Kaizen excels in all other aspects of seafood, but the Sashimi places it in a category all by it's self. I am sooooo happy it exists in Montreal and in my universe. Bravo Kaizen Sushi Bar...i can taste the Love.
