Subtle beautiful flavours

Whatever you say, don't chalk Amaya up as the Vij's of Toronto. Amaya's reputation of fresh ingredients, carefully selected flavour combinations and its goal to offer better-than-average Indian food is well-loved by locals of its Bayview and Eglinton neighbourhood and food lovers all over Toronto. I call it "upscale Indian."
After a long time of wanting to hit Amaya, I finally made it for what would be a highly anticipated dinner. The staff was incredible: highly knowledgeable servers with enough charm and experience to make you feel comfortable yet ensuring that service went smoothly.
Both regular a la carte menus and a chef's tasting menus are available, though if you have the time (and the coin), try to go for a tasting: a showcase of the chef's best flavours and signature dishes. The seafood is fresh and always reliable. Try the shrimp/prawns: giant and fresh prawns in a flavourful green mango sauce. The tandoori baby octopus is also a great dish that's a great spice level and packed with flavour. For a fun twist, try the lamb "lollipops" - tandoori spiced lamb chops.
All in all, the flavours at Amaya are refined, the ingredients fresh as you can get and dishes were all excellent - though I could have used a little more "heat." Fantastic experience, nonetheless, and totally worth the anticipation.
